Twenty-seven and in Heaven!

We went to Dimock last night to celebrate Joe's birthday and to indulge in the feast and Mom and Dad prepared! It was excellent!!! Steak, potatoes (with REAL bacon bits!Appropriate for Joe's day), salad, bread, cheese, cookie salad, wine . . . we were stuffed, but everyone somehow saved room for my (box mix) brownie birthday cake!

Joe was so surprised and absolutely thrilled when he opened his gift . . . the Lakeview Golf Membership! Summer can not come fast enough for him!

Oh, and we laughed so hard at the card that you girls sent! Luckily, I bore no resemblance to the woman on the card, and Joe has never seen such a "Look" on my face (well, maybe just that one . . . :) otherwise Joe might have been trembling instead of laughing!

Belated St. Patty's Day Delectables

We had both sets of parents (a.k.a. grandparents) over for Sunday dinner (lunch for you, Joe!). While on our trip to the grocery store for the menu, we came across a sale on all things Irish, so we went with it. The menu consisted of corned beef, mashed potatoes (true Irish staple), cooked cabbage (always a risk with the male population), asparagus, and strawberry rhubarb pie (not Irish, but soooooo good!) with ice cream. Wild Irish Rose was the drink of the day (looks like you started something, Marie, because Dad purchased the large economy size!). It was a success, but the photography was not. I'm SO BAD about remembering to do that in our empty nest situation! Good company, lively conversation, and a sunny view out the dining room window made for a perfectly picturesque gathering. :)

Sweet Potato Casserole

I entered this recipe into the Soy Foods Contest they had here at SDSU, and I ended up getting third place. I was pretty impressed with how it turned out so I thought I would share my recipe.
Annie's Sweet Potato Casserole
Ingredients:
3 small sweet potatoes(~2.5 cups mashed)
1/2 c. soy milk

4 oz. soft (silken) tofu

1/4 c. brown sugar

1 c. whole wheat pancake mix

1 c. soy milk

1.5 c. apple pie filling

1/3 c. crushed pecans

1.) Wash sweet potatoes and stab with knife. Microwave for eight minutes or until soft. Peel and mash.
2.) Combine sweet potatoes, 1/2 c. soy milk, tofu, and brown sugar in a food processor or blender and blend until smooth.
3.) Combine whole wheat pancake mix, 1 c. soy milk, and apple pie filling in a bowl. Pour mixture into an 8 or 9-inch square pan and spread evenly.
4.) Layer sweet potato mixture over pancake mixture.
5.) Top with crushed pecans.
6.) Bake at 400 degrees for 30 minutes.

SDSU Indoor Triathlon

I did it! I completed my first triathlon this morning! Ok, I'm not sure if I can really call it a true triathlon, but it makes me sound hard core so I have been :) . The race was all indoors at the SDSU Wellness Center. It consisted of 10 minutes of swimming, 30 minutes of biking, and 20 minutes of running. We had 10 minutes to transition from the pool to the bikes and five minutes to transition from the bikes to the treadmills. They had us go in flights with about 6 or 7 of us going at a time. 
They kept track of each racer's distances. These were my final results.
Swim: 18.5 laps(0.2913 miles)
Bike: 14.1 miles
Run: 2.77 miles
Total: 17.16 miles
I didn't win overall, but I did win the running portion for the females. Yay! I'm supposed to go pick up my prize sometime today. I'm excited to see what it is :) .

The number on the arm makes me look pretty intense--don't you think? :)

I tried to not look super tired in this post-race pic. It didn't exactly work. Blah!

Once I got home, I was famished so I had a bagel with PB and honey. It hit the spot! 
After eating and chattin' with Danielle, I took a hot shower--glorious!
We are spending the afternoon at Cottonwood(our favorite place for hittin' the books).

To fuel our brains, we ordered iced lattes. Danielle got mocha flavored, and I got hazelnut(of course) :). 
We've been here for a while now. I think they're gonna want to kick us out pretty soon. Danielle says we should relocate.

Proud owners of a Dodge Dakota!

Yesterday, Joe and I took a road trip to Worthington, MN to take a look at this truck that we've been drooling over for about 2 weeks. We got in for a test drive, and the vehicle exceeded all of our high expectations! We couldn't pass up this deal! We bought it on the spot!

A combination of the nice weather and buying this truck has got me excited about summertime activities like camping, bike riding, trips to the river, and even golfing! Can't wait!

Our goal now is to sell the Auroras . . . If you guys know anyone in need of a car let us know!!

Heart Smart Sweet Potato Muffins

Hey Girls!
I hope the trip back to Brookings went well. Are you having that aweful back-to-reality feeling? I hope this week won't be too busy for you guys. At least you can look forward to some warmer weather on your runs!

I got ambitious today and tried a new recipe, which was a success!

Heart-Smart Sweet Potato Muffins
These are low in fat, and high in beta carotene and potassium for a healthy heart.

Ingredients
Cooking spray
1 cup whole-wheat flour
1 cup all-purpose flour
½ cup packed brown sugar
2 ½ teaspoons baking powder
½ teaspoon ground cinnamon
1/8 teaspoon ground cloves
½ teaspoon salt
1 cup skim milk
2 egg whites
1 tablespoon canola oil
1 cup finely grated raw sweet potato
1/2 cup finely chopped dried pears
1 to 2 tablespoons turbinado sugar

Instructions

1. Preheat oven to 375F. Coat 12 muffin cups with cooking spray.
2. Combine whole-wheat flour and next six ingredients (whole-wheat flour through salt) in a mixing bowl.
3. Combine milk, egg whites and oil in a separate bowl. Whisk well.
4. Make a well in the center of dry ingredients. Pour wet ingredients into the well and stir until just combined. Gently fold in sweet potato and pears.



5. Fill muffin cups two-thirds full. Sprinkle with turbinado sugar. Bake 18 to 20 minutes, until centers spring back when touched. Makes 12 muffins.





Nutritional Information
Per muffin: 150 calories, 1.5g fat, 0mg chol., 4g prot., 32g carbs., 2g fiber, 240mg sodium.

It also works to do a bread . . .


I couldn't find dried pears, so I just grated a fresh pear (just like the sweet potato). It turned out fine, you just won't have the dried-pear texture.
These are really good, and I could see using them for an on-the-go breakfast. Yum!

KA-RAY-ZAY

This week has been quite a joy. Okay, it hasn't been that bad, but I am so looking forward to tomorrow afternoon...SPRING BREAK! And Mr. Daniel Tiede is going to be visiting for the night again. (I think it's a birthday treat to himself, and he knows he'll get something out of us, too!) Last night Chad and I spent nearly four hours in the library working on our annotated bibliographies for our women's history class. I've never spent that much time there, ever. I also saw parts of the library I'd never ever seen before, either! I'm still not finished with mine--5 more sources to go! Along with that, I have to knock out a human geography test tomorrow morning, a workout today, a 6:30 am run tomorrow, and...a reflection paper. Think that's it! Haha..sorry for the venting!


Last weekend I spent some time looking at old pics on my computer and on Mr. Timmins's old website just for a break. It was addicting and fun! :) Here are a few results..

This must be our 4x4 relay in 7th grade. I don't know what leg of the race I was, but for the sake of the other team, I hope not the first. Not trying to brag, but...notice the speck on the far right? C'mon, she could try a little harder! Jiminy.

Marie the speed demon! Maybe your freshman year at state? I think so. Intimidation!!



So I better get going...but there is one final note I'd like to add. In a couple days, Anne and I will have successfully made it to Spring Break without washing jeans once........BAHAHAHA!!!! I'm sorry Mother. :)

My Little Lap Dog



That wasn't quite comfortable enough . . .





Haha!! I guess Callie missed us while we went to the DWU and USF game! She needed some lap time!

speaking of the game, it was awesome! DWU lead almost the whole game, but USF kept it close up to the very end. The palace was packed and the fans were definitely into the game. The front row of the D-dub student section had a bunch of guys with "HEMENWAY" (the name of Wesleyan's coach) painted across their chests. There has been a lot of speculation about him moving up to another school because of all the success he's been having. I'm thinking the DWU fans were trying to send a message . . . they apparently wouldn't mind him sticking around a few more years! Also, Anne, you would have been proud of your classmate. Matt had 30 points!! and made plays that made your jaw drop! Dave had a great game too! Overall, it was a fun night, and we topped it off with a delicious popcorn ball! It is probably condsidered a sweet, but we made an exception for this "special occasion."

So, I had a message on my phone this morning from one of the nurse administrators at the hospital wanting to talk to me about going to EVERY 3RD WEEKEND!!! AAHHHH!!! Somebody pinch me! :)

Pink is the New Purple!

Last night, I ended up setting my alarm for an hour earlier than I actually had to get up. So this morning, I got up, got nearly all ready, and then realized that I could've slept in another hour. Oh well, I went to bed a little earlier than normal last night so I still got a little over seven hours of sleep :). So rather than going back to bed, I've been gettin' stuff done! Woohoo!

I started putting together a few Italy things for Taber for his trip. I printed off an extended weather forecast(looks like rain almost every day, but at least it'll be in the 50s). Then I printed off a "Top 10 Things to do in Rome" list and a "Things you Should Know About Italians" list. Also, I made him a CD with Italian instrumental music(the music that came with all those pizza recipes :) ). Now, I just need to buy some snacks and a couple tabloids, and he'll be good to go!

It dawned on me yesterday that I haven't shown off my new mizunos yet. Here they are...
The clean pink ones are replacing the dirty purple ones. I stuck with the Wave Inspires--I figure why mess with a good thing :). I took this picture a week or so ago, and it is a good thing I did because yesterday's workout was M E S S Y! We ran north of town on a gravel road and all the snow was halfways melted so it was all slushy. Needless to say, my new shoes are not as clean as they are in this picture. Oh well, I guess they've gotta get dirty sometime :(. Oh, so back to the workout. We ran two miles then did 20 minutes of fartlek running then two more miles at the end. Total it was probably about seven miles. It felt great!

So as I'm writing this I'm eating some overnight oats. Here's the mix:

1/3 c oats
1/3 c milk
1/3 c white chocolate raspberry yogurt
A few raisins
1 Tbsp flaxseed
6 crunched up animal crackers


The picture doesn't do it justice, but it is darn good. I kinda feel guilty :(. Should this be considered a sweet?

Practice Meal for Cafe NFA

Last night, I got together with a few of my classmates to practice our meal that we are preparing for Cafe NFA.

First, we made Red Pepper Hummus(sorry, no picture). It turned out really well! We had to make a tiny adjustment to the recipe because we couldn't find tahini(thanks alot, Hy-Vee). No worries, though. We used peanut butter instead :). We ate it with Atheno's pita chips. Ooo...it was good! Here's the recipe if you're ever feeling adventurous :).

Easy Red Pepper Hummus

Ingredients
1 (16 ounce) can garbanzo beans, drained and rinsed
1 tablespoon olive oil
1 medium red bell pepper, cut into 1/2 inch pieces
1 tablespoon tahini
1 fresh lime, juiced
1 1/2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder

Directions
In a food processor or blender, mix the garbanzo beans, olive oil, red bell pepper, tahini, lime juice, water, salt, black pepper, and garlic powder. Blend until smooth.

Next, we made the quiche. We ended up getting regular 9-inch pie crusts rather than the deep-dish pie crusts so then we just split the egg mixture between the two crusts, which worked out perfectly!

Ham and Swiss Quiche

Ingredients
1 unbaked 9-inch deep dish pie shell
1 c. (4oz) shredded Swiss cheese, divided
1 c. finely chopped cooked ham
2 green onions, sliced
1 can evaporated milk
3 large eggs
1/4 c. all purpose flour
1/4 tsp salt
1/8 tsp pepper

Instructions:
Preheat oven to 350. - sprinkle 1/2 c. cheese, ham and green onions into pie crust. - in a bowl, whisk together evap. milk, eggs, flour, salt and pepper - pour mixture into pie shell. sprinkle with remaining cheese
Bake for 45-50 minutes or until knife inserted near center comes out clean. cool on wire rack for 10 minutes before serving

Lastly, we made sweet potato hashbrowns. The recipe was courtesy of Martha, and I have to say, that woman knows her stuff.

Sweet Potato Hashbrowns

Serves 4

2 large sweet potatoes, 2 pounds, cut into 3/4-inch dice
6 tablespoons olive oil
1 medium onion, peeled and cut into 1/3-inch dice
2 tablespoons roughly chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper

Directions
1. Bring a medium pot of salted water to a boil. Add sweet potatoes, and cook until they can be easily pierced with a fork but still offer some resistance, 3 to 4 minutes. Drain, and rinse under cold running water. Refrigerate until completely chilled, about 1 hour.
2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add onions, and saute, stirring occasionally, until onions are tender and golden brown, about 20 minutes. Transfer onions to a small bowl, and set aside.
3. Pour remaining 4 tablespoons olive oil into the skillet, and place over medium-high heat. Add potatoes, and cook, stirring occasionally, until golden brown, about 8 minutes. Add reserved onions, and cook 2 minutes. Toss in parsley, and adjust the seasoning to taste with salt and pepper. Serve immediately.

I have to admit, I was impressed(and halfways surprised) at how good everything turned out.

We also had some fresh pineapple with our meal. Man, it doesn't get much better!

Emily insisted that I get in the picture. Cheray(the girl next to me) had her cheeks full. Haha! Whoops! She just couldn't put down her fork. It was that good! Haha!
So the day of our actual meal, we plan to serve pita chips and hummus as an appetizer, quiche, sweet potatoes, and fruit kabobs for the meal, and lemon bars(courtesy of Aramark) for dessert. How does that sound? April 6th, 11:45am--come one, come all! :)
After eating, we all worked on a take-home test that we got for our Cafe NFA class. We weren't cheating--we were just using our resources :). Briana(our hostess for the night), made us mudslides to drink while we worked on our tests. Drinkin' and cheatin' on a Sunday night--yikes! Haha!
Today, I had class from 9 to 11, and then I worked from 11 to 6. I didn't get a run in today--I'm always so pooped after working :(. The weather was gorgeous, though, so I was kinda bummed that I didn't go.
Tomorrow, I'm on the working team for a Cafe NFA meal. I'll let you know how it goes. I'm kinda excited. Their theme is "A Taste of Europe".

Bruschetta Chicken Bake

Here is a recipe from "Food and Family" that I've used a couple times and just love!

Ingredients:
1 Can (14 oz) diced tomatoes undrained
1 Pkg (6 oz) Stuffing
1/2 Cup water
2 cloves minced garlic
1.5 lbs chicken breasts
1 tsp dried basil
1 Cup Mozzarella cheese

To Make:

Preheat oven to 400 degrees

Mix tomatoes, stuffing, water, garlic, and basil just until stuffing is moistened

Layer chicken, stuffing mix, and cheese in a baking dish (we doubled the recipe and used a 9x13)

Bake for 30 minutes or until chicken is cooked through . . . enjoy!

We apperently couldn't resist sampling before the picture was taken, so it's not the prettiest! But it smelled THAT good!
